Twice in 1997, I participated in one-week long cooking experiences in France. In late January, I traveled to Sorges in the Dordogne to over indulge in foie gras and truffles. In October, the trip was to Bouilland in Burgundy. For both trips the weather was bad, but the food was great. After each I transcribed and tested the recipes and published the results for my fellow travelers. Within are these recipe collections transcribed for the web.
